If you enjoy high quality Japanese green tea, the Yuzamashi is very important. When brewing Sencha or Genmaicha, pour boiled water into the Yuzamashi, then as it cools down pour the water into the Kyusu (teapot). By doing this, the water will become the ideal temperature for brewing Sencha or Genmaicha, 176F (80C). When brewing Gyokuro, pour boiled
